
Ingredients:
• 1 small size – Raw banana Plantain
• 1 – Drumstick
• 1 – Carrot
• 1 – beans
• 2 – Potato
• 1 – Snake gourd
• 1 – Mango (raw)
• 1 – Cucumber
• 1 cup – grated/shredded Coconut
• 1 cup – curd/yoghurt
• 4 – Green chillies
• small quantity – Ginger
• 1 tsp – Cumin seeds
• 1 tsp – Turmeric powder
• a pinch – asafetida
• 2 – Cashew nuts
• small quantity – Curry leaves
• small quantity – Coriander leaves
• salt to taste
• oil for frying
Method:
- Wash, cut and boil all the vegetables separately in a pressure cooker/microwave oven adding very little water.
- Grind grated coconut, green chillies, ginger, cumin seeds and cashew nuts adding very little water.
- Mix yoghurt with turmeric powder, asafoetida and a little salt.
- Mix all the boiled vegetables with yoghurt and coconut paste and allow it to boil for 2 minutes, not more than that.
- Heat 1 tsp of oil, add curry leaves and add it to the content.
- Garnish with coriander leaves.
