Ingredients:
• 1 cup – Cauliflower florets
• 1 cup – French beans, finely chopped
• 1 cup – chopped Carrot
• 1/2 cup – green peas, shelled
• 3 – green chillies, chopped
• 2 – onions, chopped
• 1 tbsp – chopped Garlic
• 1/4 tsp – Mustard Seeds
• 8 – Curry leaves
• 1/2 cup – grated Coconut (optional)
• 1 tbsp – oil
• Salt to taste
Method:
- Parboil the cauliflower, beans, carrots and peas in a little water for about 5 or 6 minutes.
- Drain and keep aside.
- Heat oil in a pan and add the mustard, garlic and curry leaves.
- When the mustard starts spluttering add the chopped onion and green chillies and fry till the onions turn slightly brown.
- Add the parboiled vegetables and salt and mix well.
- Mix in the grated coconut.
- Cover and cook for about 2 more minutes then turn off the heat.
