
Ingredients:
• 2 cups – basmati Rice (cooked)
• 2 cups – mixed vegetables (carrots, bell peppers, baby corn, beans, green peas)
• 1/2 cup – Paneer (cubed)
• 1 – Onion (sliced lengthwise)
• 3 – Tomatoes (chopped roughly)
• 1 tsp – Cumin seeds
• 1/2 tsp – Garam Masala powder
• 1 tsp – Red Chilli powder
• 1/2 tsp – Cumin seed powder
• 1/4 tsp – pepper powder
• 2 tbsp – Coriander leaves
• salt to taste
• oil as needed
Method:
- Heat enough oil in a pan. Add the cumin seeds and let them splutter.
- Add the onion slices and saute until translucent.
- Add the mixed vegetables and stir with red chilli powder, cumin seed powder, pepper powder, garam masala powder, coriander leaves and salt.
- Grind the chopped tomatoes as puree.
- Heat a few drops of oil in a small pan and shallow-fry the paneer cubes until they turn golden brown. Keep aside.
- Once the vegetables are half-cooked, add the tomato puree and cook everything on medium high flame until the oil separates.
- Add the cooked rice and paneer cubes and toss gently to mix everything well. Serve hot.
