Ingredients:
• 2 cups – mixed vegetables (cauliflower, peas, potato, green gram etc.)
• 1.5 cups – basmati rice, soaked in water for 2 hours
• 1 tsp – Garam Masala powder
• 1 tsp – chilli powder
• 1/2 tsp – Turmeric powder
• 6 Cloves
• 6 Cardamoms
• 1 tbsp – Jaggery
• 1/4 tsp – asafetida
• 5 Curry leaves
• 5 tbsp – oil
• Salt to taste
Method:
- Prepare vegetables and wash them clean. Drain rice.
- In a pressure cooker, heat jaggery and asafoetida. When it melts, add oil.
- Add cloves, cardamom and curry leaves.
- Add vegetables. Stir fry.
- Add rice and all other spices. Stir till shiny.
- Add 5 cups of hot water and salt.
- Cook under pressure for 7 mins. or till done and fluffy.
