Ingredients:

• 2 cups – mixed vegetables (cauliflower, peas, potato, green gram etc.)
• 1.5 cups – basmati rice, soaked in water for 2 hours
• 1 tsp – Garam Masala powder
• 1 tsp – chilli powder
• 1/2 tsp – Turmeric powder
• 6 Cloves
• 6 Cardamoms
• 1 tbsp – Jaggery
• 1/4 tsp – asafetida
• 5 Curry leaves
• 5 tbsp – oil
• Salt to taste

Method:

  1. Prepare vegetables and wash them clean. Drain rice.
  2. In a pressure cooker, heat jaggery and asafoetida. When it melts, add oil.
  3. Add cloves, cardamom and curry leaves.
  4. Add vegetables. Stir fry.
  5. Add rice and all other spices. Stir till shiny.
  6. Add 5 cups of hot water and salt.
  7. Cook under pressure for 7 mins. or till done and fluffy.
