Ingredients:

• 1 small papaya, peeled, skinned, halved
• 1 tsp white Vinegar
• 1 tsp Brown sugar
• 1 tsp mixed Basil and Mint leaves, finely chopped

Method:

  1. Warm vinegar lightly in a small pan.
  2. Stir in sugar till fully dissolved.
  3. Keep half papaya intact and chop other half into chunks.
  4. Drizzle vinegar onto chopped papaya and sprinkle herbs.
  5. Toss to coat evenly.
  6. Pile chopped papaya into hollow of saved half.
  7. Serve immediately.
