
Ingredients:
• 2.25 cups flour
• 1/2 cup salad oil
• 1.5 cups powdered Sugar
• 8 eggs
• 1 cup hot water
• 1 slab chocolate
• 3 tsp baking powder
• 1 tsp vanilla essence
• 1/2 tsp – salt
• 4-5 tsp instant coffee
• 1/2 tsp – Cream of tartar
Method:
- Mix coffee powder in hot water and cool.
- Sieve dry ingredients into a mixing bowl; make a well in the centre and add salad oil, 5 egg yolks, coffee and vanilla essence.
- Beat until smooth and add finely shaved chocolate.
- Beat 8 egg whites (1 cup) and cream of tartar till very stiff.
- Pour the floured mixture over the whites and gently fold.
- Bake in an ungreased pan first in a moderately slow oven at 160 degree C for 1 hour and then at 180 degree C for 10-15 mins.
- Invert pan and cool.
