Ingredients:
• 1 cup Pomegranate (use the seedless variety)
• 1 cup moong sprouts
• 1 cup grated Coconut
• 4-5 Red Chillies
• A pinch of Asafoetida
• A few Curry leaves
• 1 tbsp oil
• 1/2 tsp mustard
• Salt to taste
• 1 tsp Lemon juice
• Coriander leaves for garnishing
• Cucumber, finely chopped (optional)
• 1 tsp ginger, grated (optional)
• 1-2 green chillies, finely chopped (optional)
Method:
- Mix pomegranate, moong sprouts and coconut well.
- Add salt and lemon juice and mix well.
- Heat the oil and add mustard, curry leaves, red chillies and asafoetida.
- Season the mixture.
- Coriander leaves can be used for garnishing.
- Finely chopped cucumber can be added to the above.
- A tsp of grated ginger can also be added.
- If you want to make it slightly spicy, add 1-2 finely chopped green chillies.
