Ingredients:

• 1/2 cup – moong
• 1 – big Potato
• 1 – Cucumber
• 1 – Carrot
• 1 – Tomato
• 1/4 cup – Green peas
• 1 – Beetroot
• 1 inch Ginger
• 1/2 cup – Pineapple chunks
• Few fresh Mint leaves
• Few Coriander leaves

Method:

  1. Soak the moong in water for an hour and then boil it till it is soft and done.
  2. Boil the potato.
  3. Chop all the above ingredients into small cubes and mix them together.
  4. Garnish it with mint, coriander and minced ginger.
  5. Refrigerate it for an hour and eat it chilled.
