
Ingredients:
• 12 – leftover idlis
• 1- onion, medium sized
• 1 – Tomato
• 1 tsp – Ginger and Garlic paste
• 2 tsp – coriander powder
• 1 tsp – cumin powder
• 1/4 tsp – Turmeric powder
• 1 tsp – Garam Masala powder
• 1 cup – mushroom, chopped
• 1 cup – mixed vegetables (carrots, peas, cauliflower, green pepper, beans, potato) –
• 2 tsp – oil
• salt to taste
Method:
- Cut each Idly into 9 pieces and deep fry it in oil or roast it in oven.
- In a pan, pour 2 tsp oil and once it is heated add ginger and garlic paste fry it for a minute.
- Then add chopped onions and fry it till it is translucent.
- Add tomato and fry it for a minute.
- Now add all the powders, vegetables and fry until almost done.
- Now add mushrooms and saute it till cooked.
- Finally add the fried Idlis and saute it for 2 mins until idlis gets all the flavours.
