Ingredients:
• 3 – Potatoes (cubed)
• 1 – Onion (chopped)
• 1 tsp – ginger-garlic paste
• 1 – Tomato
• 2 – whole spices (bay leaves, cloves, Cinnamon stick, anise)
• 1 tsp – Fennel seeds
• A few sprigs – Curry leaves
• Oil as required
• Salt to taste
• For masala:
• 1/4 cup – Mint leaves
• 1/4 cup – Coriander leaves
• 3 – Green chillies
• 1/4 cup – Coconut
• 1 tsp – peppercorns
Method:
- Grind all the ingredients for masala into a fine paste and keep aside.
- Heat enough oil, fry the whole spices, fennel seeds, curry leaves.
- Add chopped onions, ginger-garlic paste and salt, saute everything for a few minutes until the raw smell goes away.
- Add chopped tomatoes and saute for a few minutes. Add the ground masala, stir for a few minutes.
- Add potatoes and enough water.
- Cook everything on medium flame until the vegetables are done.
