Ingredients:
• For dressing:
• Juice of 1 Lemon
• 2 tbsp – oil
• 1/2 tsp – pepper
• 1/4 tsp – salt
• 1/4 tsp – Sugar
• For salad:
• 1 cup – chopped Onion
• 1 cup – diced Tomatoes
• 1/2 cup – finely chopped fresh coriander
• 1/2 tsp – chopped Mint
• 1 cup – black eyed peas, soaked overnight
Method:
- Mix together the ingredients for the dressing in a small bowl.
- Place the salad ingredients in a large bowl. Add the dressing and toss well.
- Cover and chill.
