Ingredients:
• 6 – small round Brinjals
• 2 – Onions grated
• 6 – Cloves of Garlic
• 1 inch piece Ginger grated
• 1 tbsp – Tamarind powder
• A piece of Jaggery
• Red Chilli powder as required
• 1 tsp – Turmeric powder
• 1 tbsp – Garam Masala powder
• 1/4 cup – powdered Peanuts
• 1/4 cup – Coconut powder
• Salt to taste
Method:
- Mix all the above ingredients, except brinjal.
- Wash and clean the brinjals. Then make small slits in them.
- Stuff them with the above mixture.
- In a pressure cooker or pan, heat some oil.
- Add mustard, jeera seeds, broken red chillies.
- When these begin to splutter, add the stuffed brinjals and any of the remaining masala. Add a little water if required, and cook till it is done.
