Ingredients:

• 6 – small round Brinjals
• 2 – Onions grated
• 6 – Cloves of Garlic
• 1 inch piece Ginger grated
• 1 tbsp – Tamarind powder
• A piece of Jaggery
• Red Chilli powder as required
• 1 tsp – Turmeric powder
• 1 tbsp – Garam Masala powder
• 1/4 cup – powdered Peanuts
• 1/4 cup – Coconut powder
• Salt to taste

Method:

  1. Mix all the above ingredients, except brinjal.
  2. Wash and clean the brinjals. Then make small slits in them.
  3. Stuff them with the above mixture.
  4. In a pressure cooker or pan, heat some oil.
  5. Add mustard, jeera seeds, broken red chillies.
  6. When these begin to splutter, add the stuffed brinjals and any of the remaining masala. Add a little water if required, and cook till it is done.
