Ingredients:

• 1 cup – (about 170 grams/6 oz.) Dates
• 1 cup – rolled oats
• 1 cup – Milk
• Pinch of salt
• 4 tbsp – unsalted chopped pistachios, or as needed
• Additional Milk to serve, optional

Method:

  1. Halve the dates and remove the stones and stems. Chop them into smaller pieces.
  2. Add enough boiling water to cover the dates and let it sit for about 20-30 minutes.
  3. While that’s soaking, bring the milk and 1.25 cups of water to boil.
  4. Once boiling, add the oats and salt to the milk.
  5. Mix and reduce the heat to simmer
  6. Cook for about 10-15 minutes (depending on the type of your oats)
  7. Cook until it reaches your desired level of consistency.
  8. Meanwhile, strain the dates – retaining some of the soaking liquid. Remove the skin from the dates if you want.
  9. Now place the peeled dates in a blender along with a few tbsps of the soaking liquid.
  10. Blend to a smooth puree.
  11. Add half to your oatmeal and keep half to be added while serving.
  12. Add more milk if needed and garnish with the chopped pistachios and additional date puree.
