Ingredients:
• 1 – Medium Orange
• 175 gm – Butter
• 175 gm – Light muscovado Sugar
• 175 gm – Self raising flour-
• 3 eggs
• 50 gm – Ground Almonds
• 1/2 tsp – Bicarbonate of soda
• Icing Sugar – for dusting.
Method:
- Preheat the oven to 190 degree Celsius or a fan oven to 170 degree Celsius
- Butter and line a 20 cm round cake tin.
- Puree the peeled and deseeded orange .
- Cream the butter and sugar until creamy.
- Add the eggs one by one and beat well.
- Now add the remaining ingredients and mix it well.
- Pour the batter into the prepared tin and bake for 25 to 30 mins or until an inserted skewer comes out clean.
- Cool the cake and dust it with icing sugar.
