Ingredients:
• 2 tsp – Baking powder
• 200 gms – Butter
• A fistful of castor sugar, for dusting
• 5 – Eggs, separated
• 250 gms – Maida
• 125 ml – Lemon juice
• Lemon rinds
• 125 ml – Orange juice
• Orange rinds
• 250 gms – Sugar
Method:
- Beat butter and sugar until light and fluffy.
- Add egg yolks and beat well.
- Gradually add orange, lemon juices and rinds.
- Sift together flour, baking powder and add it to the butter-sugar mixture. Fold in egg white.
- Pour the mixture into a greased pan and bake in a pre-heated oven at 170 degree C for 45 mins.
- Sprinkle castor sugar and decorate with fresh fruits of your choice.
