Ingredients:

• 10 – big leafs of Palak (spinach)
• 3 – medium sized potatoes, boiled and mashed thoroughly
• 1 – green chilli, chopped finely
• 1/2 tsp – Red Chilli powder
• 1/2 tsp – black pepper powder
• 1/2 tsp – roasted cumin powder
• 1/2 tsp – dry coriander powder
• 2 tsp – chat masala powder
• 2 tbsp – green coriander, finely chopped
• Salt – to taste
• Oil – 2 tbsp
• For batter :
• 1 cup – besan.
• Water – 1/2 cup
• Ajwain – 1/4 tsp
• Red Chilli powder- 1 tsp
• Salt – to taste
• A pinch – baking soda

Method:

  1. Wash the palak leafs and allow them to dry.
  2. Mix besan, water and masalas together to make a thick batter.
  3. Mix mashed potatoes and all masalas thoroughly and divide it into 8-10 parts.
  4. Take palak leaf and put one part of masala on it, flatten it and roll out the leaf.
  5. Dip the leaf in the batter and deep fry in hot oil until golden brown.
  6. Serve hot with tomato ketchup.
