
Ingredients:
• 200 gm – fresh paneer, chopped into cubes
• 100 gm – green Grapes
• 100 gm – black Grapes
• 1 – orange, peeled, deseeded
• 1 – small red capsicum, finely chopped
• 3 or 4 – black olives, sliced into rounds or halved
• 1 – tender green Cabbage leaf, shredded roughly
• 1 tbsp – Olive oil
• Salt to taste
• For Marinade:
• 1 tbsp – green all purpose chutney
• 1 – tiny flake garlic, crushed
• 1 tbsp – peanuts, roasted, skinned, crushed
• 1/2 tsp – cumin seeds, crushed
• 1/2 tsp – mustard seeds, crushed
• 1/2 tsp – sugar, powdered
• 1/2 tsp – chilli flakes
• 1/2 tbsp – Basil leaves, finely chopped
• 1 tsp – Lemon juice
Method:
- Mix all ingredients for marinade with a fork or whisk in a small bowl.
- Put paneer cubes into a large salad bowl.
- Pour marinade over pieces and toss with hands till all pieces are well coated.
- Cover and keep aside for 25-30 minutes.
- Put fruit in a large salad bowl and keep refrigerated till required.
- Heat oil in a pan, add chopped capsicum and stir fry for a minute.
- Add cabbage and saute again for a minute.
- Add paneer, toss gently and saute till excess moisture evaporates.
- Take off fire and allow to cool to room temperature.
- Just before serving, add paneer to fruit.
- Toss well and serve.
