Ingredients:

• 200 g – low cal Paneer
• 500 g – Brinjals
• 2 tsp – Coriander seeds
• 2 tsp – Channa dal
• 2 tsp – Urad Dal
• 5 – dry Red Chillies
• 1 tsp – Mustard Seeds
• Salt to taste
• Oil

Method:

  1. Slit the brinjals, leaving the stems intact.
  2. Roast channa dal, urad dal, red chillies and coriander seeds.
  3. Grind them and make a coarse powder.
  4. Mix the powder with salt and grated paneer.
  5. Stuff brinjals with the mixture.
  6. Heat oil, add mustard and let it splutter.
  7. Add brinjals and shallow fry.
  8. Serve hot with rice or roti.
