Ingredients:
• 200 g – low cal Paneer
• 500 g – Brinjals
• 2 tsp – Coriander seeds
• 2 tsp – Channa dal
• 2 tsp – Urad Dal
• 5 – dry Red Chillies
• 1 tsp – Mustard Seeds
• Salt to taste
• Oil
Method:
- Slit the brinjals, leaving the stems intact.
- Roast channa dal, urad dal, red chillies and coriander seeds.
- Grind them and make a coarse powder.
- Mix the powder with salt and grated paneer.
- Stuff brinjals with the mixture.
- Heat oil, add mustard and let it splutter.
- Add brinjals and shallow fry.
- Serve hot with rice or roti.
