Ingredients:

• Paneer-1/4 cup
• Basmati Rice-1 cup
• Water-1 & 1/2 cups
• Bay Leaf-1
• Cinnamon-1/2 inch bit
• Cumin-1/4 tsp
• Onion-1
• Green Chilli-1
• Red Chilli Powder-1/4 tsp
• Turmeric Powder-1/4 tsp
• Salt-to taste
• Oil-2 tsp
• For Roasting and Grinding:
• Oil-1 tsp
• Tomato-1
• Cloves-2
• Mint Leaves-a few
• Coriander Leaves-a few

Method:

  1. Soak basmati rice in water for 15 minutes. Cube paneer and shallow fry them and set aside.
  2. In a pan, add oil followed by chopped tomato, cloves,mint and coriander leaves.
  3. Add this to a blender and grind it by adding little water.
  4. In a pressure cooker, add oil,cumin, cinnamon stick, bay leaf, chopped onion and green chilli. Fry till onion turns pink.
  5. Add the grounded paste. Then, add red chilli powder and turmeric powder. Add salt, drained rice and water.
  6. Pressure cook for 3 whistles and add fried paneer cubes and mix. Serve hot with chips and raita.
