Ingredients:
• Paneer-1/4 cup
• Basmati Rice-1 cup
• Water-1 & 1/2 cups
• Bay Leaf-1
• Cinnamon-1/2 inch bit
• Cumin-1/4 tsp
• Onion-1
• Green Chilli-1
• Red Chilli Powder-1/4 tsp
• Turmeric Powder-1/4 tsp
• Salt-to taste
• Oil-2 tsp
• For Roasting and Grinding:
• Oil-1 tsp
• Tomato-1
• Cloves-2
• Mint Leaves-a few
• Coriander Leaves-a few
Method:
- Soak basmati rice in water for 15 minutes. Cube paneer and shallow fry them and set aside.
- In a pan, add oil followed by chopped tomato, cloves,mint and coriander leaves.
- Add this to a blender and grind it by adding little water.
- In a pressure cooker, add oil,cumin, cinnamon stick, bay leaf, chopped onion and green chilli. Fry till onion turns pink.
- Add the grounded paste. Then, add red chilli powder and turmeric powder. Add salt, drained rice and water.
- Pressure cook for 3 whistles and add fried paneer cubes and mix. Serve hot with chips and raita.
