Ingredients:

• Poppadam – 12 nos
• Shallots/Pearl Onion – 3 nos
• Curry leaves – 1 sprig
• Unsweetened Desiccated Coconut – ½ cup
• Green chillies – 2 nos (optional)
• Salt – to taste
• Olive Oil– 1 tsp

Method:

  1. Peel and chop finely the onion and green chillies.
  2. Heat oil in a non-stick pan, reduce flame to medium.
  3. Stir fry onion for 2 minutes.
  4. Add curry leaves and stir for another 2 minutes till they curl and dry.
  5. Add the coconut and stir on low flame for 2-4 minutes till they brown lightly, add chopped chillies and salt to taste. Remove from fire, take into a serving bowl.
  6. Layout 3 to 4 pappadams on a 700w microwave tray, toast on 1 side for 1min 11 sec, turn over and toast for another 22 seconds.
  7. Crush roasted pappadums so that you get 1×1 inch pieces roughly and mix the above ingredients.
  8. Serve immediately with plain brown rice, mint chutney and yoghurt soup.
