Ingredients:
• 1 lb – Pasta (any kind)
• 2 – medium Plum tomatoes, chopped
• 3 – green chillies, chopped
• 1 Clove – garlic, minced
• 1 – ginger, minced
• 1 – Onion, large, minced
• 1/4 cup – Green peas
• 1 – medium Carrot (cut in 1 inch long thin strips)
• 1 cup – cooked chick peas
• 1 tsp – chilli powder
• 1 tbsp – chopped coriander
• 1/2 tsp – Turmeric powder
• 1/2 tsp – Garam Masala powder
• 1/2 tsp – Cumin seeds
• 1/2 tsp – Mustard Seeds
• Salt – to taste
• 1 tbsp – oil
• Juice of 1/2 Lemon
Method:
- Cook pasta as per box directions.
- In the meantime, heat oil, add cumin and mustard seeds.
- Add the onion, garlic, ginger and saute till onion is cooked.
- Add the other vegetables, except tomatoes.
- Stir till they are cooked.
- Add the tomatoes and all the spices and mix well.
- Add pasta, chick peas and salt, and mix well.
- Add lemon juice after removing pan from the fire.
- Serve hot sprinkled with the coriander leaves.
