Ingredients:

• 1 cup – Ghee
• 1/2 cup – powdered Sugar
• 1 cup – Brown sugar (or powdered jaggery)
• 2 eggs
• 1 tsp – vanilla essence
• 3 cups – sifted flour
• 1/2 tsp – baking soda
• 1/2 tsp – salt
• 1&1/4 cups – lightly crushed Peanuts (fried and salted)
• a little Sugar to sprinkle

Method:

  1. Beat the ghee with the powdered sugar and brown sugar till light and fluffy.
  2. Add the eggs, one at a time, beating well.
  3. Add the vanilla essence.
  4. Sift the flour together with baking soda and salt.
  5. Add flour to egg mixture.
  6. Add the crushed peanuts (with the inner brown skin removed).
  7. Chill the dough for 1 hour.
  8. Shape the dough into small balls the size of a walnut; place on a greased baking tray and flatten with fingers.
  9. Sprinkle a little sugar on each biscuit.
  10. Bake at 185 degrees for about 10 mins. till the biscuits are golden brown.
  11. Remove from the tray while biscuits are hot and cool on wire racks.
  12. Store in airtight containers when completely cold.
