Ingredients:

• Potatoes – 2.
• Frozen peas – 1/2 cup.
• Red dry chillies – 2 deseeded.
• Mustard Seeds – 1/2 tsp.
• Coriander powder – 2 tsp.
• Chilli powder – 1 tsp.
• Ginger finely chopped – 1/2 tsp.
• Onion – 1.
• Tomato – 2.
• oil – 3 tsp.
• Curry leaves – a few.
• Salt to taste.

Method:

  1. Cut potatoes into cubes and half cook in a cup of water with little turmeric. Save the stock.
  2. Cut onions, tomatoes, red chillies and ginger.
  3. In a pan heat 3 tsp oil, splutter mustard and add red chillies, curry leaves and finely cut ginger and fry till ginger turns golden brown.
  4. Add onions, fry till golden brown.
  5. Now add half cooked potatoes, chopped tomatoes and fry for few seconds.
  6. Now add coriander powder, chilli powder and add potatoes water, salt and peas and boil till done.
