Ingredients:

• 1 lb – lean ground Beef
• 2 large- russet potatoes, peeled and diced into 1/2 inch cubes
• 1/2 cup – yellow onion, diced fine
• 1/2 cup – green bell pepper, diced fine
• 1 tbsp – fresh garlic, minced fine
• 1 tbsp – Olive oil
• 1 tsp – salt
• 1 tsp – coarse ground black pepper
• 1 tsp – ground cumin
• 2 – large tomatoes, cored, peeled, and cut into 1/2 inch pieces

Method:

  1. Heat a large skillet and, when hot, add the olive oil.
  2. Add the beef, crumbling as you put it in the skillet.
  3. When it turns light brown, add the onions, bell pepper, garlic, and all the spices.
  4. Cook for 10 mins, stirring often.
  5. Then add the diced potatoes.
  6. Cover it, reduce the heat to medium low and cook until the potatoes are tender.
  7. Add the tomatoes, cover and simmer for 5 mins.
  8. Remove from heat, pout into a bowl and serve over white rice or with hot flour tortillas.
