
Ingredients:
• 2 cups – packed Cilantro leaves, chopped fine
• 1 cup – Chickpea flour/besan
• 1 tbsp – Rice flour
• 1/4 cup – grated Coconut
• 4 – green chillies, minced fine
• 2 tsp – Lemon juice
• 1 tsp – ginger-garlic paste
• 1 tsp – sesame seeds
• 1 tsp – Poppy Seeds
• 1 tsp – Turmeric
• 1 tsp – Garam Masala
• 1 tsp – Sugar
• 1 pinch – Asafoetida
• oil for frying
• salt to taste
Method:
- Mix the cilantro, coconut, green chillies, ginger-garlic paste, sesame seeds, poppy seeds, lemon juice, turmeric, asafetida, garam masala, sugar and salt properly.
- Then, heat oil in a pan and fry this for some time.
- In a bowl, take besan and rice flour, and add a little bit of salt and chill powder and water and make a dough.
- Keep it aside.
- Make small balls of the dough and make small chapatis of it.
- Add the fried mixture into each of the chapatis and fold it well.
- Now, heat oil in a pan and deep fry the chapatis till golden brown.
- Take it out and cut it into small slices.
- The kothimbir vadi is ready.
