
Ingredients:
• 1 cup Self-Raising Flour
• 1 cup Brown sugar
• 2 eggs
• 1 cup Oil
• 2 cups Carrot (grated)
• 1 cup Raisins (chopped)
• 2 tsp – Cinnamon
• Decoration:
• 60 gms Cheese
• 30 gms Butter
• 1 cup Icing Sugar
• 2 tsp – Lemon Juice
• 1/3 cup Walnuts (chopped)
Method:
- Mix flour, sugar, carrots, cinnamon and raisins in a bowl.
- Combined oil and eggs and pour into the bowl, stirring properly.
- Pour into cake tin, microwave on medium-high for 7-8 mins and cool.
- Beat cheese and butter in a bowl until you get a smooth mixture, then gradually beat in icing sugar and lemon juice till mixed properly.
- Decorate on the cake along with walnuts.
