Ingredients:

• For khandvi:
• 1 cup – gram flour
• 3 cups – Butter milk
• salt to taste
• Pinch of Turmeric powder (Haldi)
• For garnishing:
• 1 tbsp – oil
• 1 tsp – Mustard Seeds
• 1 tsp – sesame seeds
• 2-3 – Green chilli thinly sliced
• Water
• Coconut grated
• Coriander leaves chopped

Method:

  1. For khandvi:
  2. Mix besan, buttermilk, salt and turmeric powder in a microwave safe bowl.
  3. Make sure besan is mixed well in buttermilk.
  4. Cook the batter in microwave for 5 mins.
  5. Take out the batter, stir well and put it back in the microwave for 3 more mins.
  6. Take out again and stir well and put it back for 2 more mins.
  7. Spread the cooked batter while hot over the aluminium foil (or back of steel thali) very thinly. Let it cool.
  8. Then cut strips 3 inches wide and 9-10 inches long.
  9. Roll them neatly.
  10. For garnishing:
  11. Heat oil in small pan and add mustard seeds.
  12. When mustard seeds crackles, add sesame seeds and green chillies.
  13. Spread them over khandvi.
  14. Garnished with coconut and coriander leaves.
