
Ingredients:
• 500 to 700 gms – Prawns
• 1.5 tsp – ginger, ground
• 1 no Egg white
• 1 1.5 tsp – Corn flour
• 5 tbsp – oil
• 1 1.5 tsp – salt
• For the Sauce:
• 2 tbsp – chilli sauce
• 3 tbsp – Tomato puree
• 1 1.5 tbsp – soya sauce
• 2 tbsp – Chicken stock
• 2 tsp – Corn flour
• 2 tbsp – water
• 1 1.5 tbsp – dry sherry
• 2 tsp – Vinegar
Method:
- Clean and cut the prawns into half.
- Rub them with salt and ginger and keep aside for 15-20 mins.
- Make a batter out of the egg white, corn flour and coat the prawns with it.
- Prepare the sauce by heating together the chili sauce, puree, soya sauce, vinegar and chicken stock.
- Make a paste with 2 tsp corn flour and 2 tbsp water.
- Add this paste to the mixture while boiling and stir till sauce thickens.
- Heat the oil and fry the prawns.
- Add these fried prawns into the sauce.
- Allow the sauce to boil before serving.
