
Ingredients:
• 350 g – Prawns with tail.
• 60 ml – vegetable oil.
• 80 g – onions.
• 10 g – garlic.
• 100 ml – Tamarind pulp.
• 30 g – Lemon grass.
• 10 g – fresh Turmeric root.
• 5 sprigs – curry leaves.
• 2g – aniseed.
• 10g – red chillies.
• 1 – cinnamon.
• 3g – cumin.
• 100g – tomatoes.
• Salt and pepper to taste|
Method:
- Clean the prawns, marinate in red chilli powder, salt, 1/2 the tamarind pulp, cumin seeds and corn flour for half an hour.
- Deep fry in hot oil, taking care not to overcook the prawns. Keep aside.
- Method for sauce:
- Fry chopped onions in oil with chopped garlic and saute well.
- Add curry leaves, crushed lemon grass stalk, aniseed, cinnamon, chopped fresh long red chilli and tomatoes.
- Cook well till the sauce has a coarse consistency. Season with salt and pepper and garnish with coriander sprigs.
