
Ingredients:
• 4 – large eggs.
• 2 cups – low-fat milk.
• 1.5 cups – apples (peeled and sliced).
• 1.5 cups – granola.
• 1.5 tbsp – maple syrup.
• 1 tbsp – butter.
• 1 tsp – vanilla extract.
Method:
- Grease four 16-ounce ramekins with butter.
- Preheat oven to 375 degrees F.
- In a medium bowl, stir together granola, fruit and maple syrup. Set aside.
- In a separate bowl, whisk together the eggs, milk and vanilla.
- Divide evenly among prepared ramekins.
- Add fruit mixture to ramekins in even amounts.
- Stir contents in each ramekin, just enough to mix.
- Bake for 25-30 mins or until set.
- This is great served with whipped cream.
