Ingredients:

• 3 – Beetroots
• 2 – Potatoes
• 4 tbsp – roasted Peanut powder
• 2 – green chillies, chopped
• Oil, mustard, Asafoetida (hing), turmeric, cumin (all in small quantity)
• Salt to taste
• Chopped fresh Cilantro (coriander) and grated Coconut to garnish

Method:

  1. Peel and chop beetroot and potatoes into cubes and cook them in pressure cooker for two whistles.
  2. Drain remaining water after cooking then add salt to taste, and peanut powder.
  3. Heat oil in a small pan, add mustard, asafoetida, turmeric, cumin and chopped green chillies.
  4. Mix all well and garnish with fresh chopped coriander and grated coconut.
  5. Enjoy it with chapattis (pita bread ), tortillas, rice or just by itself.
