
Ingredients:
• 2 cups – boiled Rice
• 4 – Green chillies
• Curry leaves
• 1 Onion (finely chopped)
• 1 tbsp – grated fresh Coconut
• 1/2 tbsp – coriander (finely chopped)
• 1/4 tsp – Cumin seed
• 1/4 tsp – Mustard Seeds
• 1/4 tsp – Urad Dal
• 1/4 tsp – Turmeric powder
• 2-3 pinches of Asafoetida
• salt to taste
• juice of half Lemon
• 1 tbsp – oil
Method:
- Heat oil in a heavy bottomed pan and add cumin and mustard seeds, and dal.
- Add green chillies, curry leaves, onions, asafetida.
- Cook till onions are light pink.
- Add rice, turmeric, salt, lemon, coriander, and coconut.
- Stir gently till well mixed.
- Cover and simmer till steaming hot.
- Serve hot with potato chips.
