Ingredients:

• 2 cups – basmati rice, washed & soaked for 30 minutes
• 2 medium radishes
• 1/2 cup – Green peas
• 1 Potato (diced)
• 3 Green chillies (finely chopped)
• 1.5 inch piece – Ginger (peeled & chopped)
• 2 to 3 Cloves of Garlic (peeled & chopped)
• 1 sprig – dill leaves (finely chopped)
• 1 tsp – Cumin seeds
• juice of 1 Lemon
• salt to taste
• 3 tbsp – Ghee or oil

Method:

  1. Clean the radishes and slice into 1/2 cm. thick round slices.
  2. Heat ghee or oil in a pressure pan or pressure cooker.
  3. Add cumin, allow to splutter.
  4. Add ginger, garlic and chillies, stir.
  5. Add radish, potato, peas, stir fry for 2 minutes.
  6. Add salt, dill leaves, lemon juice.
  7. Add 5 cups water, bring to a boil.
  8. Cover with the lid, wait for 2 whistles.
  9. Take off fire, allow steam to subside.
  10. Gently transfer to serving dish.
  11. Garnish with chopped fresh coriander and grated cheese.
