Ingredients:
• 2 tbsp cooking oil
• 1 big Onion
• 2 tbsp Lime juice
• 4 tsp curry powder
• 1 cup Chicken broth
• 200gm boneless Chicken
• 2.5 tsp ground Ginger
• 1 small green pepper (chopped)
• 1 heaped tsp Corn starch
• Coriander to garnish
• Salt to taste
Method:
- Cut chicken into sma;ll pieces and marinate with 1.5 tsp ginger and oil Heat oil and fry thinly sliced onions till brown
- Put in marinated chicken and fry till golden
- Put in curry powder and fry for one more minute stirring constantly
- Add chicken broth; boil and simmer for 10 mins
- Blend corn starch, rest of ginger, lime jiuce in a small bowl and stir into mixture
- Continue cooking till mixture thickens and bubbles (approx. 1 min)
- Stir in tomato wedges and chopped capsicums and simmer 3 mins longer
- Garnish with coriander and serve with hot rice
