Preparation for the dry masala for Sambar, a spicy lentil and vegetable dish

1/4 cup coriander seeds
1/2 teaspoon turmeric powder
1 tablespoon cumin seeds
1/4 cup whole dry red chilies (or to taste)
1 teaspoon whole black pepper
1/2 teaspoon mustard seeds
1 teaspoon fenugreek seeds
1/8 cup bengal gram
1/8 cup white urad dal
1/8 cup tuwar dal
1 pinch of cinnamon
1 pinch ground clove

1. Heat kadhai and dry roast all the ingredients separately.
2. Allow to cool.
3. Blend all the ingredients together to a fine powder.
4. Store in an air tight container for future use.
