Ingredients:

• 250 gm – Brinjal
• 30 gms – Coriander seeds
• 25 gms – groundnut seeds
• 15 gms – sesame seeds
• some Curry leaves
• 1 tsp – Turmeric
• salt to taste
• Oil for frying Brinjals
• 2-3 gms – Asafoetida (or depending on the liking)
• Red Chilli powder, according to taste
• 1 tsp – mustard and Cumin seeds for seasoning

Method:

  1. Roast coriander seeds, ground nut seeds and sesame seeds separately and powder them in a mixer separately.
  2. Mix the three powders together in a bowl or plate and keep it aside.
  3. Cut the brinjal in a required shape and size.
  4. Heat oil in a pan and add mustard seeds and cumin seeds and the asafoetida powder.
  5. Once the mustard splutters, add turmeric powder, curry leaves and cut brinjals, salt and mix thoroughly.
  6. Allow it to cook for 10-15 minutes.
  7. See that the oil forms a layer to the sides of the pan.
  8. Once brinjals are cooked, add the powder of coriander, groundnut and sesame seeds and mix it evenly to spread to all the brinjals.
  9. It is rich in protein and can be had with rice or chapatis.
