Ingredients:
• 250 gm – Brinjal
• 30 gms – Coriander seeds
• 25 gms – groundnut seeds
• 15 gms – sesame seeds
• some Curry leaves
• 1 tsp – Turmeric
• salt to taste
• Oil for frying Brinjals
• 2-3 gms – Asafoetida (or depending on the liking)
• Red Chilli powder, according to taste
• 1 tsp – mustard and Cumin seeds for seasoning
Method:
- Roast coriander seeds, ground nut seeds and sesame seeds separately and powder them in a mixer separately.
- Mix the three powders together in a bowl or plate and keep it aside.
- Cut the brinjal in a required shape and size.
- Heat oil in a pan and add mustard seeds and cumin seeds and the asafoetida powder.
- Once the mustard splutters, add turmeric powder, curry leaves and cut brinjals, salt and mix thoroughly.
- Allow it to cook for 10-15 minutes.
- See that the oil forms a layer to the sides of the pan.
- Once brinjals are cooked, add the powder of coriander, groundnut and sesame seeds and mix it evenly to spread to all the brinjals.
- It is rich in protein and can be had with rice or chapatis.
