Ingredients:

• 1/2 kg medium shrimp, peeled and deveined
• 1/2 cup chopped Onion
• 2 tbsp oil
• 1/2 tbsp Ginger paste
• 1/2 tbsp Garlic paste
• 1/2 tbsp Cumins powder
• 1/2 tbsp coriander powder
• 1 tbsp curry powder
• 2-3 green chillies, chopped finely
• salt as per taste
• pepper as per taste
• 1ripe mango, peeled and diced
• 2 potatoes, peeled and cubed
• 1 cup Coconut Milk
• 1 cup water
• chopped Coriander leaves for garnishing

Method:

  1. Season shrimp with salt and pepper.
  2. Heat oil. Saute shrimp for 2-3 mins.
  3. Remove, drain and keep aside.
  4. In the same pan, add a little oil and saute onion till it is transparent.
  5. Add ginger and garlic paste, saute for another 3 mins.
  6. Add all the powders, potatoes, and green chillies.
  7. Then, add coconut milk, salt as per taste, and water.
  8. Bring it to a boil.
  9. Let it simmer on slow flame for 10-15 mins till the potatoes are tender.
  10. Add the shrimp and mango pieces.
  11. Cook for another 5 mins.
  12. Garnish with coriander leaves.
  13. Serve hot with rice.
