
Ingredients:
• Bitter gourd – 1 lb
• Butter milk (sour) – 1/2 cup
• Tamarind juice – 1 cup
• Onions, chopped – 1/2 cup
• Jaggery – 1 tbsp
• Chilli powder – 1 tbsp
• Ginger-garlic paste – 1 tsp
• Turmeric – 1/2 tsp
• Sesame powder – 1 tbsp
• Salt according to taste
Method:
- Cut bitter gourd into 1-inch pieces.
- Take a saucepan, add butter milk and the bitter gourd pieces and boil for 10 minutes. This will help take out the bitterness.
- Take a pan and add some oil. When the oil becomes hot, add cumin seeds.
- Add the chopped onions and fry till they become light brown.
- Add turmeric and ginger-garlic paste and fry them for five more minutes.
- Add tamarind juice and let it boil for some time.
- Add chilli powder, salt, jaggery and bitter gourd pieces.
- Add sesame powder and let it simmer for five minutes.
- Goes well with plain rice.
