Ingredients:

• Bitter gourd – 1 lb
• Butter milk (sour) – 1/2 cup
• Tamarind juice – 1 cup
• Onions, chopped – 1/2 cup
• Jaggery – 1 tbsp
• Chilli powder – 1 tbsp
• Ginger-garlic paste – 1 tsp
• Turmeric – 1/2 tsp
• Sesame powder – 1 tbsp
• Salt according to taste

Method:

  1. Cut bitter gourd into 1-inch pieces.
  2. Take a saucepan, add butter milk and the bitter gourd pieces and boil for 10 minutes. This will help take out the bitterness.
  3. Take a pan and add some oil. When the oil becomes hot, add cumin seeds.
  4. Add the chopped onions and fry till they become light brown.
  5. Add turmeric and ginger-garlic paste and fry them for five more minutes.
  6. Add tamarind juice and let it boil for some time.
  7. Add chilli powder, salt, jaggery and bitter gourd pieces.
  8. Add sesame powder and let it simmer for five minutes.
  9. Goes well with plain rice.
