Ingredients:
• 1 – whole Chicken jointed into 4 to 6 pieces
• 6 – medium size potatoes, peeled
• 3 – large onions, quartered
• 2 tbsp – Butter
• 1 tsp – Mint powder
• 1 tsp – pepper powder
• salt – to taste
• 1 tsp – Vinegar
Method:
- Wash the chicken and the potatoes.
- Mix in all the above ingredients and leave aside for 15 mins.
- Arrange the marinated chicken and potatoes in a buttered oven proof dish.
- Cover the dish with foil.
- Bake in a moderate oven (355 degrees) for about 45 mins.
- Serve with steamed vegetables and any type of bread.
