Ingredients:

• 1.25 cups – all purpose flour
• 1/2 tsp – baking powder
• 1/4 tsp – salt
• 1/2 cup – Butter
• 1/2 cup – packed Brown sugar
• 1/2 cup – white Sugar
• 1 – Egg
• 1.5 – flaked Coconut

Method:

  1. Preheat oven 350 deg f (175 deg c).
  2. Combine flour, baking soda, salt, set aside.
  3. In a bowl, cream butter, brown sugar, white sugar until smooth.
  4. Beat in the egg and vanilla until it is light and fluffy.
  5. Gradually blend in the flour mixture.
  6. Then mix the coconut.
  7. Drop tspfuls on to an ungreased cookie sheet.
  8. Cookies should be 3 inches apart.
  9. Bake for 8-10 mins until lightly toasted.
  10. Cool on wire racks.
