
Ingredients:
• 8-10 medium Tomatoes
• 2 Potatoes (boiled and mashed)
• 1/2 cup – mixed boiled vegetables (carrot, beans, peas), chopped
• 1/2 tsp – Garam Masala
• 1/2 tsp each of chilli powder, Turmeric and coriander powder
• salt to taste
• 1 tbsp – oil
• 1/2 tsp each of Jeera and Mustard Seeds
• 2 dry Red Chillies dry (crushed)
• 1 tbsp – grated cheese
• chopped coriander
Method:
- Cut off the top of the tomato and scoop out the seeds. Chop the cut tops finely.
- Heat oil in a kadai, add jeera and mustard seeds. When they pop, add the chopped tomatoes and fry for a minute. Add all the dry masalas and fry for another minute.
- Add the potatoes and vegetables. Mix well and cook for a minute.
- Stuff the tomatoes with the filling.
- Top with grated cheese and coriander.
- Place tomatoes in a cooker container. Dot with butter. Pressure cook for one whistle.
