Ingredients:

• 6 Tomatoes
• 1 Onion
• 1 Ginger
• 2 Green chillies
• 2 tsp – peas
• 1 Carrot
• 2 Potatoes
• 1 tbsp Lemon juice
• 1/2 tsp salt
• 1 tsp red chilly powder
• 4 tsp of oil
• 1 tsp – Cumin seeds
• pinch of Hing
• 1/4 tsp – Turmeric
• 1 tsp – coriander powder
• Some coriander leaves, grated Coconut – for garnish

Method:

  1. Slice off the tops of the tomatoes and scoop out the insides.
  2. Mix together the chopped onion, grated ginger, chopped green chillies, grated carrot, peas and chopped potatoes.
  3. Add to it lemon juice, salt and red chilly powder.
  4. Fill this mixture in the tomatoes, keeping aside 2 tsps of the mixture.
  5. In a pressure cooker, add oil, cumin seeds, and hing.
  6. Add in the reserved mixture, turmeric and coriander powder.
  7. Once this is lightly fried, add the tomatoes.
  8. Cover and cook for 2 mins.
  9. Remove from heat and keep aside for further 3-4 mins. Then serve the stuffed tomatoes, sprinkled with coriander leaves and grated coconut.
