
Ingredients:
• 6 Tomatoes
• 1 Onion
• 1 Ginger
• 2 Green chillies
• 2 tsp – peas
• 1 Carrot
• 2 Potatoes
• 1 tbsp Lemon juice
• 1/2 tsp salt
• 1 tsp red chilly powder
• 4 tsp of oil
• 1 tsp – Cumin seeds
• pinch of Hing
• 1/4 tsp – Turmeric
• 1 tsp – coriander powder
• Some coriander leaves, grated Coconut – for garnish
Method:
- Slice off the tops of the tomatoes and scoop out the insides.
- Mix together the chopped onion, grated ginger, chopped green chillies, grated carrot, peas and chopped potatoes.
- Add to it lemon juice, salt and red chilly powder.
- Fill this mixture in the tomatoes, keeping aside 2 tsps of the mixture.
- In a pressure cooker, add oil, cumin seeds, and hing.
- Add in the reserved mixture, turmeric and coriander powder.
- Once this is lightly fried, add the tomatoes.
- Cover and cook for 2 mins.
- Remove from heat and keep aside for further 3-4 mins. Then serve the stuffed tomatoes, sprinkled with coriander leaves and grated coconut.
