Ingredients:
• 2 – medium size firm Tomatoes
• 1/2 tsp – Cumin seeds
• 1/2 cup – soft Jaggery (or 1/2 cup powdered sugar)
• 1 tsp – chilli powder
• 1 or 2 – Bay Leaves
• 1 – small Cinnamon stick
• 3 to 4 – cashew nuts, crushed
• 1 tbsp – oil
• 1/2 cup – water
• 1 tsp – salt
Method:
- Chop the tomatoes and keep aside.
- Heat oil in a pan, add cumin seeds, bay leaves and cinnamon stick. Let them splutter.
- Now add the chopped tomatoes, salt, chilli powder and saute for some time.
- Add water and jaggery/sugar and cook till the tomatoes become soft and the chutney becomes thick in consistency.
- Take from fire, add the crushed cashewnuts and serve.
