Ingredients:

• For the pastry:
• 225 g plain flour
• A pinch of salt
• 100g – Butter cut in cubes
• 1 – Egg beaten
• 1-2 tsp – icing Sugar
• For the filling:
• 100g – Butter melted
• 450g – cooking apples
• 75g – Sugar
• 75g – Raisins
• 1 tsp – ground mixed spices

Method:

  1. Sift the flour and salt in a bowl.
  2. Add butter cubes and rub until the mixture resembles fine bread crumbs.
  3. Add the beaten egg and mix into smooth dough.
  4. Chill this in fridge for 30 minutes.
  5. Pre heat oven to 230 degrees C.
  6. Roll out the pastry to a desired shape (rectangle or square).
  7. Brush it with melted butter.
  8. Mix the remaining ingredients together and sprinkle over the pastry.
  9. Roll up and brush it with melted butter.
  10. Bake for 15 minutes, reduce heat and bake for another 15 minutes. Cool.
  11. Before serving, add icing sugar.
