Ingredients:
• 2 – skinned Chicken breasts, cut into 1 inch cubes
• 8 – cherry Tomatoes
• 1 – green pepper, seeded and cut into 1 inch portions
• 1 – yellow pepper, seeded and cut into 1 inch portions
• 4 – pearl Onions
• Marinade:
• 1.5 cups – soy sauce
• 1 tsp – Garam Masala
• 1 tsp – dhania-jeera powder
• 10 – Garlic Cloves
• 1 inch – Ginger
• 1/2 cup – cilantro, finely chopped
• 1/4 cup – mint, finely chopped
• 3 tsp – chilli powder
• 2 tsp – canola/olive/corn oil
Method:
- Blend oil, ginger and garlic into a fine paste.
- Mix the blended garlic-ginger paste with soy sauce, cilantro, cayenne pepper and mint.
- Marinate chicken in the sauce for 1 hour.
- Skewer 3 cubes of chicken, 1 tomato, onion, green pepper and repeat until the skewer is full.
- Baste the skewer with spray of oil and grill for around 15 mins or until done.
