Ingredients:

• 2 cups – all – purpose flour
• 1 cup – Wheat flour
• 1/2 cup – Oats (ground fine powder)
• 1 tbsp – Active Dry yeast
• 1 tsp – Salt
• 1/2 tsp – Sugar
• 1- Red Chilli (chopped) or 1 tsp Red Chilli flakes
• 3- Garlic Cloves
• 1/2 cup – Cooked and mashed Pumpkin chunks
• 1/4 cup – Luke warm water
• 5 tbsp – Olive oil (for shaping and greasing)
• 3 tbsp – Coriander leaves (chopped)
• 1/2 cup – Cheese (grated).

Method:

  1. Mix the sugar, salt and yeast in lukewarm water and let it sit for 5 mins.
  2. Meanwhile, combine all types of flour and oats in a mixing bowl. Then add the mashed pumpkin chunks, red chilly or red chilly flakes, garlic, gradually adding the foaming yeast and olive oil, and mix everything well.
  3. Transfer the mix to a lightly floured surface and knead for a few minutes, until the dough softens.
  4. Now grease a deep bowl with olive oil and place the soft dough in it. Brush with some more oil. Cover it and keep it aside for 1 hour in a warm place.
  5. After an hour, punch the dough and press to flatten it.
  6. Now add a few drops of oil to the baking square pan, add the dough and sprinkle it with the chopped coriander leaves and keep aside for 1 more hour.
  7. The dough will again raise and double in size. Now sprinkle the grated cheese over it.
  8. Then preheat the oven to 350F; place the baking pan in the middle rack and bake for 20-25 mins or until the crust turns brown.
  9. Serve with grilled meat/ salads.
