Ingredients:

• 2 cups – Bread flour
• 1 cup – Yellow cornmeal
• 1 tbsp – Active Dry yeast
• 1 tsp – Dry herbs (parsley or basil)
• 1 tsp – Red Chilli flakes
• 1 tsp – Sugar
• 1 tsp – Salt
• 1 cup – Luke warm water
• 3 tbsp – Oil
• Oil for brushing.

Method:

  1. Mix the yeast, sugar and salt in some lukewarm water. Stir and keep it aside for 5 -6 mins until the yeast turns foamy.
  2. Combine the flour, cornmeal, dry herbs and red chilly flakes in a large bowl and add the foaming yeast water and oil and knead into a soft dough.
  3. Now arrange the dough in a large greased bowl and keep in a warm place for 2 hours until the dough doubles in volume.
  4. Then, punch the doubled dough and knead again.
  5. Divide the dough into 6-8 medium sized balls and arrange them in a greased mould. Let it sit for another in a warm place.
  6. Now preheat the oven to 350F. Brush the breads with oil and bake in middle rack for 20-25 mins until the crust turns golden brown.
  7. Remove from the oven let it cool.
  8. Serve with cream cheese, salted butter or with any spread.
