
Ingredients:
• 1 cup – basmati Rice
• 1 Cloves – Cloves
• 1 inch – Cinnamon
• 2 – Cardamoms
• 1 – Bay Leaf
• A few – Cashew nuts
• 1/2 cup – sliced Onion
• 2 – Green chillies
• To mix: 1 cup – Mint leaves, ground with 2 cups water
• To grind:
• 1 tbsp – Coconut
• 1/2 inch – Ginger
• 5 flakes – Garlic
• A few – cinnamon, cloves, aniseeds and Poppy Seeds
• 2 – dry chillies
• 2 tbsp – oil
• salt
• 1 tbsp – Ghee
Method:
- Soak the rice for 30 minutes and drain water. | | Heat oil and ghee. | | Season with cloves, cinnamon, cardamom, bay leaves, and cashew nuts.
- Add onions and green chillies. Mix for 2 mins.
- Add coconut masala paste and mix till raw smell goes.
- Add rice and mix for 1 minute.
- Add mint water and salt.
- Cook and serve with raita.
